Researchers conducted an analysis of aroma compound variations between Sichuan Dark Brick Tea (SDBT) and Sichuan Fuzhuan Brick Tea (SFBT). The volatile compounds present in both teas were identified and quantified through headspace solid phase microextraction gas chromatography-mass spectrometry (HS-SPME-GC-MS). The analysis showed that each tea contained 37 identical volatile compounds. The highest concentrations of volatile compounds in SDBT were olivetol at 15.55 mg/kg followed by linalool at 14.01 mg/kg and β-ionone at 11.94 mg/kg while the least concentrated compounds included (E)-3,7-dimethylocta-1,3,6-triene at 0.76 mg/kg along with l-calamenene at 0.99 mg/kg and cis-3-hexenyl acetate at 1.04 mg/kg. SFBT contained its highest concentrations of methyl salicylate (24.49 mg/kg), geranylacetone (21.73 mg/kg), and β-ionone (20.75 mg/kg) while its lowest concentrations included (E)-3,7-dimethylocta-1,3,6-triene (0.58 mg/kg), l-calamenene (0.74 mg/kg), and 2-acetyl pyrrole (0.84 mg/kg). The aroma components of SDBT and SFBT displayed similarity while their concentrations showed significant differences. The two teas shared the same least abundant components: (E)-3,7-dimethylocta-1,3,6-triene and l-calamenene.
