Fragrance and flavor deformulation demands exceptional analytical sensitivity and selectivity, as many aroma-active compounds are present at parts-per-million or even parts-per-billion levels. Our laboratory is equipped with high-resolution GC-MS systems capable of separating and identifying hundreds of volatile constituents in a single analysis. For non-volatile and thermally labile flavor compounds, we employ LC-MS and HPLC platforms. GC-Olfactometry, our sensory-guided analytical technique, allows us to correlate chemical composition with perceived odor, enabling precise identification of the compounds that drive the sensory character of a fragrance or flavor. NMR spectroscopy provides complementary structural information for the unambiguous identification of unknown or novel compounds. All quantitative data is generated using validated methods with appropriate internal standards and quality control procedures.
