Proteases are a group of large, complex enzyme molecules that perform highly focused proteolytic functions. Proteases are among the most experimental enzymes and play a decisive role in diverse fields such as commercial, pharmaceutical, analytical, diagnostic and effluent abatement. Here, we focus on the applications of proteases in various industries.

> Proteases for detergent industry

Statistics show that nearly 25-30% of commercial enzymes are key ingredients in the manufacture of detergents. For example, proteases are widely used in detergent synthesis to remove protein-based soils.

> Proteases for leather industry

Dehairing is an important process in the leather industry and the use of chemicals such as sodium sulphide can lead to various pollution related problems. The protease-based hair removal process is environmentally friendly and has shown good results, such as the strength and quality of the product.

> Proteases for food industry

Proteases are added to milk during cheese production to hydrolyze casein. Research shows that plant-based proteases were identified as potential sources with rennet potential. In the baking industry, a variety of plant- and microbial-based proteases are used for gluten degradation. In the brewing industry, proteases are used in the production of high-quality gluten-free beer.

> Therapeutic applications of proteases

Non-invasive therapeutic procedures have largely continued to evolve in the treatment of human diseases and conditions. Various diseases can be treated by enzymatic degradation of substrates. Some enzymes are highly selective and specific even at very low concentrations. Studies have shown that collagenase group enzymes can be used in the treatment of Dupuytren's disease, Peyronie's disease, wound healing, etc.

Researchers are focusing on formulating proteases into human-friendly formulations to maximize their use in a variety of applications. For example, proteases are recommended as practical skin care formulations due to their active action.
